Christmas is the time of year where people love to bake and love eating baked goods. I’ve been making the same shortbread cookies 3 years in a row and they are always a crowd pleaser. For blogmas day 9 I’m going to walk you through this very simple cookie recipe along with an icing recipe for the cookies AND a cute hot chocolate DIY to go along with your cookies if you plan to give them as gifts!
For the cookies all you’re going to need is:
- ½ cup of cornstarch
- ½ cup of icing or confectionary sugar
- 1 cup of flour
- ¾ cup of soft butter
You’re going to sift in your dry ingredients and mix them together, if you use a kitchen aid mixer or a hand held mixer make sure you start them at the lowest setting so your ingredients don’t fly everywhere. Once they’re mixed you’re going to add in your butter a little bit at a time, allowing each portion to mix through before adding more. You’ll mix that until you get a dough consistency. Bake at 300℃ for 15-20 minutes. I always double this recipe to make about 30-35 cookies.
For the icing you’ll need:
- 1 ½ cups of icing sugar
- 3 table spoons of softened butter
- 1 tablespoon of vanilla extract
- 1 tablespoon of milk
- Food colouring (you don’t need to add food colouring if don’t want to)
If I’m being completely honest I winged this entire recipe I didn’t follow the directions and it came out great just don’t be afraid to taste it!
A cute little addition you can add if you’re giving these as gifts is a homemade hot chocolate kit. Pick up some festive baggies from the dollar store and loose hot chocolate powder from bulk barn, some marshmallows and candy canes. Put a generous amount of hot chocolate powder in the baggie then top it with some marshmallows and candy canes — you’ll have a very cute diy hot chocolate kit!
